Avocado - It's Not Just For Guacamole Anymore!

Seems like everyone from Tom Brady to Subway is advocating the benefits of Avocado these days. Since yesterday was National Margarita Day - which may have been celebrated with a little guacamole – we thought we would feature the Avocado in this week’s healthy eating tip!

So, what are the mysterious properties of Avocado? Here are the Proven Health Benefits of Avocado according to Authority Nutrition.

Incredibly nutritious – they contain some of the most abundant nutrients, in a single 3.5 ounce (100 gram) serving (3):

  • Vitamin K: 26% of the RDA.
  • Folate: 20% of the RDA.
  • Vitamin C: 17% of the RDA.
  • Potassium: 14% of the RDA.
  • Vitamin B5: 14% of the RDA.
  • Vitamin B6: 13% of the RDA.
  • Vitamin E: 10% of the RDA.

This is coming with 160 calories, 2 grams of protein and 15 grams of healthy fats. Although it contains 9 grams of carbs, 7 of those are fiber so there are only 2 “net” carbs, making this a low-carb friendly plant food. Avocados do not contain any cholesterol or sodium, and are low in saturated fat.

One thing we need to state – while somewhat obvious – if your only source of Avocado is smeared on a tortilla chip and washed down with a Margarita, the benefits may not be quite so powerful. So, to help you along, here are three breakfasts that you'll likely enjoy.

Ingredients

  • 1 Piece of sliced bread – try thick, crusty artisan breads, sourdough, rye, wheat, multigrain or whatever you prefer
  • ½ Ripe fresh Avocado peeled, seeded and mashed
  • 1 Egg
  • 2 Slices of heirloom or beefsteak tomatoes
  • 2 Slices cooked bacon (maple bacon, peppercorn bacon, turkey bacon or veggie bacon
  • Fresh pepper
  • Sea salt

Avocado Toast with Fried Egg

  1. Toast 1 slice bread and spread with 1/2 ripe, Fresh Avocado (mashed or sliced).
  2. Spray a small nonstick skillet with cooking spray and fry one egg as desired.
  3. Place cooked egg onto avocado toast, sprinkle with salt and pepper if desired.

Avocado Toast with Heirloom Tomatoes

  1. Toast 1 slice bread, spread with 1/2 ripe, Fresh Avocado (mashed or sliced)
  2. Place 2 slices heirloom or beefsteak tomato over the avocado
  3. Top with fresh cracked pepper and sea salt to taste.

Avocado Toast with Bacon

  1. Toast 1 slice bread, spread with 1/2 ripe, Fresh Avocado (mashed or sliced)
  2. Place 2 slices cooked bacon over the avocado
  3. Top with fresh cracked pepper and sea salt to taste.
